{Recipe} Chocolate Speculoos Molten Lava Cake // Brew Maison

It was our 41st monthsary :)

Was beyond happy when I cut it open! Love the flow :')

Not a fan of thin, liquid-y molten centers, I love my molten cakes to be filled with thick and rich fillings :)

Had 2 by myself hahaha one with strawberry shortcake ice cream

One with Green Tea ice cream ;)

LOVE speculoos it's currently our favourite spread hehe

Chocolate Speculoos Molten Lava Cake

Ingredients:
  • 200g dark chocolate, chopped
  • 100g unsalted butter, chopped
  • 2 eggs
  • 2 egg yolks, extra
  • 80g caster (superfine) sugar
  •  1/4 cup (35g) plain flour, sifted
  • Speculoos Cookie Butter

Method:

1. Preheat oven to 200C.
Melt chocolate and butter, stir until the chocolate is melted and smooth.

2. Place the eggs, extra yolks and sugar in a bowl and whisk until well combined. Add the chocolate mixture and flour and whisk again.

3. Spoon half the mixture into greased and floured ramekins / cupcake moulds

4. Spoon some speculoos cookie butter into the center of each mould. I used about 2 tsp each :) Then top up with the remaining chocolate batter.

5. Bake for 12-15mins or until edge is set but center is still slightly soft.

6. Serve warm.

Gorgeous :')

Also cooked mushroom chicken fried rice for him :)

Dinner at Brew Maison! This is the first cafe he drove me to hehe :-)

It was a month away from Halloween but the decorations were up already! So pretty :)

This place is quiet and the ambience is great, it was a Friday night but it wasn't packed at all. By the time we were done eating (about 7+?), we were the only ones left haha

Not to mention there is free complimentary parking for the first hour! Perfect :)

I came here specially to try their Korean-inspired lattes!!! Pity their 3D latte artist isn't around though :(

Had such a tough time deciding between Taro/Sweet Potato/Pumpkin latte!! ALL my favourites and I nearly ordered all three hahaha

Food was average, but for the price I wouldn't complain :)

Chicken Curry Pasta / Chicken Teriyaki Wrap

Ordered their Taro Latte in the end and I loved it!!! It was smooth, creamy with chunky yam bits. Yam flavour was very pronounced :) Now I can't wait to try their pumpkin, sweet potato and matcha latte!

The boy ordered iced matcha thinking it was iced matcha latte but it was just iced green tea hahahahahaha had to spam sugar

What a wonderful night ended with grocery shopping at Cold Storage just nearby :)
