{Recipe} Lunch Box // Cheesy Chocolate Truffle Egg Cups



 

Lunch box for him who is currently on crutches :( Doing whatever I can to soothe his pain and suffering <3



Cheesy scrambled eggs, tomato fried rice with mushrooms, onion & corn, kung pao chicken and pan-fried gyozas :) These are his favourite food and highly requested by him! So glad I finally had the time to cook since exams are over :)




Grilled teriyaki salmon, garlic broccoli pasta with toasted sesame seeds and doused in sesame dressing, and a fried egg :-)

 
   
Made Cheesy Chocolate Truffle Egg Cups for breakfast! 

Preheat oven to 180°C. Lightly grease a muffin pan (I used coconut oil). Roll each slice of bread using a rolling pin to flatten slightly.

Place the bread in the prepared pan and press against the sides to form a cup. I brushed the insides with truffle oil, for an extra indulgence ;)

You can choose to layer ham slices in it before cracking an egg into the hole.

Sprinkle a generous amount of shredded cheddar cheese and bake for about 12-15mins!

Mine was burnt on top but I love burnt bits so... :)

 Dribble more truffle oil when serving, then slice open and marvel at the runny yolk~


Quick and simple to execute, not to mention healthy and delicious :)
