{Recipe} Swirled Ovomaltine Browned Butter Banana Cake / Molten Ovomaltine Banana Loaf


Banana cakes are one of my favourites, not just because they are simple to make, but I love the flavour and moisture from mashed bananas!


 Swirled Ovomaltine on top :) Love the crackly look :)


With bits of molten chocolate peeping out :) The banana cake looks darker than usual, due to the browned butter used.



 Made them into loaves as well too!

 I think I added a little too much Ovomaltine? HAHA it was so difficult to slice



Browned Butter Banana Cake (with molten Ovomaltine/Ovomaltine swirls)

Ingredients:

1 3/4 cups all-purpose flour
3/4 cup caster sugar
1 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 large eggs, lightly beaten
150g unsalted butter
5 ripe large bananas, mashed well (make sure they are spotty ripe!)
1 teaspoon pure vanilla extract
1/2 cup dark chocolate chips
1/2 cup of Ovomaltine spread

Method:


Preheat oven to 180C. 
Cook the butter in a saucepan over medium heat, swirling every few seconds until melted. Turn off the heat when the liquid turns amber and you see dark brown milk solid bits at the bottom of the pan. Transfer everything into a medium-sized bowl and let cool.
In a large bowl combine the flour, sugar, baking powder, baking soda, and salt. Set aside.

In a medium-sized bowl, combine the melted browned butter, smashed bananas, eggs, and vanilla. With a rubber spatula, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky. Do not over mix the batter.

Melt 1/2 cup of Ovomaltine in the microwave for about 20 seconds.
For swirled Ovomaltine banana cake: Pour all the batter into a greased pan. Scoop melted Ovomaltine on top and make swirls using a toothpick/chopstick. 

Bake until golden brown and a toothpick inserted in the center comes out clean, about 60 minutes.

For molten Ovomaltine banana loaves: Pour half the banana batter into a greased loaf pan before adding desired amounts of Ovomaltine, then top it off with more banana cake batter.

Bake for 1 hour or until toothpick inserted comes out clean. 


 Place on a wire rack to cool and then remove the cake from the pan. Serve warm or at room temperature.
