{Recipe} Flourless Chocolate Almond Butter Brownies with Matcha Mascarpone Frosting // The Good Nut Co

A one-bowl recipe that's quick to put together and tastes good! Not to mention it's slightly healthier than usual recipes as it is flourless, butter-free and raw cacao powder (rich in antioxidants!) is incorporated ;) 

I chose to frost the brownies with some creamy bittersweet matcha mascarpone for that flavour and colour contrast ;) You just need 3 simple ingredients!


Almond Butter Brownies:
1/2 cup creamy almond butter from The Good Nut Co
1/2 cup brown sugar (or coconut sugar)
3 eggs
1 tsp vanilla extract
1/2 cup raw cacao powder (or cocoa powder)
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chocolate chips

Matcha Mascarpone Frosting:
250g mascarpone cheese (softened)
1/4 cup icing sugar or caster sugar
1/2 tbsp matcha powder dissolved in hot water to form a thick viscous liquid 


1. Preheat oven to 180 degrees celsius. Grease a rectangular baking sheet and line with baking paper.
2. Add all ingredients (except chocolate chips) into a large bowl and beat on medium speed until smooth and well-incorporated.
3. Fold in chocolate chips.
4. Spread batter onto the greased pan and sprinkle with additional chocolate chips if desired.
5. Bake for 15-20 minutes or until a toothpick comes out with moist crumbs. The center will appear underdone but it will continue to bake while cooling!
6. Cool brownies completely on a cooling rack

Matcha Mascarpone:
1. Mix all ingredients together and add milk to desired consistency.
2. Spread on the cooled brownies.
3. Chill in fridge for 20mins so that it's easier to cut before serving :)

Each jar of The Naked Almond Butter can make up to 4 litres of almond milk (using 1 tbsp of almond butter to 1 cup of water), super affordable and value for money!

 P.S. Almonds are high in Vitamin E, protein, fibre and anti-oxidants! It also has a low glycemic index which keeps you satiated and act as a great snack.
